Ingredients
- 2 cups of fresh or frozen peas
- 1 bowl of water (ice cold or room temperature)
- 2 tbsp of butter
- 2 cloves of garlic
- 1 tbsp of chopped onion
- 1 cup of vegetable stock (preferred) or normal water
- 1 tbsp of black peppercorn powder
- 1 tbsp of olive oil (extra virgin)
- 1 tbsp of fresh curd or yogurt
- Sprinkle little thyme
- Salt to taste
Steps
- Take a bowl of ice-cold water to balance the fresh peas or water with room temperature to put the frozen peas
- Heat a saucepan in medium-low heat, add 2 tbsp of butter and stir to melt it
- Add finely chopped onion with garlic and stir until caramelised
- Now add 2 cups of fresh or frozen peas. Stir thoroughly to mix the ingredients with peas properly in medium-low heat and allow it to cook for 2 minutes
- After 2 minutes, add 1 cup of vegetable stock or water, stir once, and allow it to simmer for 10 minutes in medium-low flame
- Add 1 tbsp of freshly grounded black peppercorn, sprinkle little thyme, stir, and allow it to simmer again for 5 minutes
- Switch off the stove and allow the cooked peas to cool down for 2-3 minutes
- Take a blender, pour the cooked peas, add 1 tbsp of fresh curd or yoghurt, and blend it into a smooth paste
- Now pour the blend on to a sieve and drain the remains from cooked peas. Pour back the silky-smooth peas blend on the saucepan and bring it to a boil. Sprinkle little salt as required
- Put 1 tbsp of olive oil over the soup, sprinkle some black peppercorn powder and raw peas before serving your healthy peas soup
