Ingredients
- 2 cups boiled rice
- ½ cup roasted peanuts
- 1 tsp mustard seeds
- 2 tbsp olive oil (extra virgin)
- 1 tbsp chopped coriander
- 1 tsp turmeric powder
- 1 medium-size onion
- 3 garlic cloves
- 1 lime
- 2 roasted papad (Indian cracker) to garnish
- Salt to taste
Step 1
Take a bottom-heavy non-stick pan, add 2 tbsp of olive oil (extra virgin) and temper the oil by putting 1 tsp of mustard seeds. Now put chopped onion with garlic. Stir until colour changes.
Step 2
Add ½ cup of roasted peanuts to the pan and stir well with the ingredients. After 5 minutes, put 2 cups of boiled rice into the pan and mix it well with the peanuts.
Step 3
Put 1 tsp of turmeric, mix it well with the rice and the peanut in low flame. Keep mixing until all the rice grains absorb the turmeric. Add salt to taste with 1 tbsp of chopped coriander and mix the ingredients well.
Step 4
To finish the dish, pour lime juice from 1 lime, mix it and switch off the stove.
