Ingredients
- 250 gms of Okra (Bhindi)
- 1 medium size red onion
- 3 pods of garlic & ½ block of ginger
- 1 medium size capsicum
- 2 green chillies
- 2 tbsp of Cornflour
- 1 tbsp of soy sauce
- 1 tbsp of sugar
- 2 ½ tbsp of red chilli sauce
- 1 tbsp of Apple cider vinegar
- 1 ½ tbsp of white sesame seeds
- 5 tbsp vegetable oil
- 1 tbsp of garam masala
- 1 tbsp of cumin (jeera) powder
- 1 tbsp of coriander powder
- ½ tbsp of red chilli powder
- Salt to taste & Water as required
- Spring onion to garnish
Steps
- Clean the Okra (Bhindi), cut the head and tip of it. Cut the Okra (Bhindi) in the middle and continue the process
- Add 2 tbsp of cornflour, 1 tbsp each of garam masala, cumin powder, coriander powder, ½ tbsp of red chilli powder and salt to taste. Mix it properly and keep it aside for 20 minutes
- Now dice the onion, capsicum, finely chop the ginger and garlic and slice the green chillies from between
- Heat a non-stick pan, add 5 tbsp of vegetable oil. Now add the marinated Okra (Bhindi) in batches so that it is evenly spread in the oil. Shallow fry in medium high flame until it is golden brown on both the side. Put the fried Okra (Bhindi) on a kitchen towel to soak the excess oil
- Add onion, capsicum, ginger, garlic, green chillies in the same pan with 1 tbsp of sugar. Stir in low medium flame until caramalised
- Take a small bowl, add 1 tbsp of soy sauce, 1 tbsp of Apple cider vinegar, 1 tbsp of white sesame seeds, mix it and add it to the pan. Stir it and allow it to cook for 5 minutes in low medium flame
- Now add 2 ½ tbsp of chilli sauce to the mix, add little water and allow it to simmer for 5 minutes more
- Add the fried Okra (Bhindi) to the sauce and mix it properly. Add salt as required and cook for 5 minutes until the sauce blends well with the Okra (Bhindi)
- Serve your hot and sweet Okra (Bhindi) by garnishing with finely chopped spring onion and ½ tbsp of white sesame seeds
