Home-Made Pork Vindaloo

Ingredients

500 gms Pork (boneless)

For the Spice Mix

2 tbsp Kashmiri powder

1 tbsp cumin seed

10 black pepper corn

1 cinnamon stick

2-3 cloves & cardamom

1 tsp turmeric powder

2 tbsp apple cider vinegar

1 tbsp coriander powder

1 tbsp ginger garlic paste

1 tbsp tamarind paste

Other

1 onion

2 green chillies

1 tsp brown sugar or jaggery

2 tomato

2 tbsp mustard oil

Salt & Water as required

Step 1

Clean the Pork boneless cubes properly and boil it in a pressure cooker for 18 whistles. Allow it to cool down.

In the meantime, make the spice mix by dry roasting the cumin seeds, black peppercorn, cinnamon stick, cloves and cardamon. Add it to a grinder and put Kashmiri red chilli powder, apple cider vinegar, ginger garlic paste, tamarind paste, coriander powder, turmeric powder. Now add little water and grind it into a thick spice paste.

Step 2

Heat a cast-iron wok with mustard oil and fry the onion, green chillies, tomatoes with the jaggery until caramelised. Now add spice mixture to the pan and stir once to let the spice cook for 5-7 minutes in low flame.

Step 3

Now add the boiled Pork boneless pieces to the spice mixture and stir well. Let it cook for 10 minutes in low flame till the meat absorbs the spices. Keep stirring in between to distribute the heat evenly.

Add ½ cup of water with salt to taste, stir properly and let it boil for another 15 minutes in medium-low flame to finish the dish.

Enjoy your home-made Pork Vindaloo with some piping hot rice.
