Grilled Veggies in Coconut Milk

Choose your veggies as per your wish and availability. I had cauliflower, red pumpkin, kolhapuri chillies, onions and tomatoes.

Clean and thinly slice the veggies, especially cauliflower and pumpkin. Make a cut in between the chillies,  make your own cut for onions and tomatoes.

Put all the veggies in a bowl and marinate with 2 tbsp olive oil (extra virgin), 1 tbsp black pepper powder, 1 tbsp garam masala and a little salt to taste. Let it marinate for 15-20 minutes.

Next, heat your grill pan and grease it with some olive oil (extra virgin). Lower the heat and put the veggies into the pan in small portions to distribute the heat evenly. Par grill the veggies for 10-12 minutes and keep them aside.

For the sauce

You will need 1 cup coconut milk with grated garlic (6 pods), 1 sprig curry leaves and 1 tbsp of black pepper powder. Mix all the ingredients and put them in a heated saucepan. Let it simmer for 10 minutes on low flame.

Add the grilled veggies, mix it nicely with the sauce, add little water and let it simmer for another 10 minutes.

Give it a nice stir to finish the dish. Add salt as per your preferences.
