Grilled Pork with Veggies

Ingredients

400 gms boneless pork

2 medium-size capsicum

1 medium-size eggplant

1 medium-size tomatoes

1 medium-size onion

2 tbsp soy sauce

2 tbsp apple cider vinegar

1 tbsp ginger garlic paste

1 tbsp black pepper powder

Salt to taste

Step 1

In a pressure cooker boil the pork and wait for 10 whistles. Let it depressurize naturally, drain the water, and keep it aside. Marinate the pork pieces with soy sauce, apple cider vinegar, ginger garlic paste and black pepper powder. Keep it aside for 15 minutes.

Step 2

Take a grill pan, heat it and add the pork pieces. You will notice fat coming out of the meat after 2-3 minutes. Let it grill for 10 minutes overall.

Step 3

Remove the grilled pork from the pan, sprinkle a little salt and place it in a paper towel to soak the excess fat.  Now add the marinated vegetables to the pan and let it grill in the meat fat for 2-3 minutes.

Step 4

Now put the grilled vegetables first in a serving bowl and put the grilled pork meat over it to enjoy with some beers!
