Ingredients
100 gms Chicken boneless cubes
100 gms Paneer cubes
1 medium Capsicum
2 tomatoes
1 Cucumber
1/4 Watermelon
2 red onions
4 tbsp of Peanut sauce (homemade)
2 tbsp of apple cider vinegar
2 tbsp crushed black peppercorn
1 lime to squeeze
Salt as required
Olive oil as required
Toothpicks as required
Step 1
Take a big bowl to put the cut vegetables. Below are the specifications to cut the vegetables –
• Capsicum – dice it
• Tomatoes – dice it, clean the seeds and cut into 3 equal pieces
• Onions – Cut it into half, again cut into two equal parts and start removing the petals
• Watermelon – Take a ¼ piece, and cut it into small pieces
• Cucumber – Wash the cucumber, cut it into half and start dicing it
Now put all the cut vegetables into the big bowl and put 2 tbsp of apple cider vinegar, 2 tbsp of crushed black peppercorn, drizzle some olive oil and add ½ tsp of salt. Mix the vegetables with the ingredients together and keep it aside.
Put the boneless chicken cubes and paneer in two separate bowls. Add 2 tbsp of peanut sauce in each bowl and mix it properly. Keep it aside for 20 minutes.
Step 2
Heat a grill pan in low medium flame and place the marinated vegetables to the pan. Keep stirring the vegetables until the juice dries down. Switch off the stove when you notice the change in colour of the vegetables and tomatoes getting dissolves. Put the grilled vegetables back into the bowl and allow it to cool down. Now heat the same grill pan again, drizzle with some olive oil and place the soft pieces of paneer one by one. Take a tong and keep moving the pieces constantly, so that it does not stick to the pan. Once the paneer cubes change colour to light brown, take it out and keep it in a flat plate or tray. Allow it to cool down. It will take 7-8 minutes to grill the paneer cubes in low medium flame.
Step 3
In the same pan, drizzle some olive oil and place the pieces of boneless chicken cubes one by one. Allow one side of the chicken to grill for about 5 minutes and flip the pieces to the other side to cook again for 5 minutes. With the help of a tong start moving the pieces constantly until it is light brown on both sides. The process will take around 12 minutes. Put the chicken in a separate flat plate or tray and allow it to cool down.
Squeeze 1 portion of lime juice onto the grilled paneer and chicken pieces to start making assorted party platter.
Pick a toothpick, first poke the capsicum followed by onion petals, watermelon, cucumber with paneer or chicken. Repeat the process to complete the platter. Serve veg & non-veg party platter with homemade peanut sauce and salad.
