100 gms minced chicken
2 medium-size eggplants
1 medium-size onion
3 green chillies
8-10 cherry tomatoes
1 tbsp soy sauce
1 tbsp apple cider vinegar
1 tbsp black pepper powder
2 tbsp cooking oil
1 stalk of Basil leaves
Salt to taste
Marinate the minced chicken in soy sauce and vinegar for 30 minutes.
Take a wok shaped pan, heat it with cooking oil and add the minced meat with diced eggplants with skin. Fry it for 5 minutes in high flame.
Add the sliced onions, ginger and chillies, mix it well and fry for another 5 minutes.
Add the cherry tomatoes with black pepper powder and salt to taste. Fry for another 5-6 minutes in high flame.
Put the basil leaves, mix it with the fried eggplants and minced meat to finish the dish.
