Egg Sambar Bombs

Ingredients

  • 4-5 hardboiled eggs
  • 1 medium size red onion
  • 1 medium size capsicum
  • 2 green chillies
  • ½ cup coconut milk
  • 3 tbsp of sambar masala powder
  • 1 tbsp of turmeric powder
  • 1 tbsp of red chilli powder
  • 1 tbsp of tamarind paste
  • 2 tbsp of vegetable oil
  • 2 tbsp of finely chopped spring onion and 1 tbsp green chillies to garnish
  • 1 tbsp of dry mango powder
  • Salt to taste
  • Water as required

Step 1

  • Take a chopping board and carefully cut all the boiled eggs into half. Take out the yolks in a bowl and keep it aside
  • Pour ½ cup of coconut milk into the bowl containing yolk. Now use a hand blender to make it into a smooth paste. Add 3 tbsp of sambar masala powder, 1tbsp of tamarind paste, 1 tbsp of turmeric powder, 1 tbsp of red chilli powder. Mix it properly with the yolk and coconut milk blend

Step 2

  • Heat a pan, add 2 tbsp of vegetable oil, and add the finely chopped onion and capsicum. Stir in low medium flame until it is golden brown
  • Add the yolk, coconut milk and masala blend into the pan and keep stirring for 5 minutes. Cover it with a lid and allow it to simmer for 10 minutes in low flame.

Step 3

  • After 10 minutes, open the lid and stir the mix properly. Add little water, salt to taste and allow it simmer for another 5 minutes until it the mix is thickened
  • Take the serving board, place the boiled eggs, and slowly start pouring the mix in the eggs. Use a spoon and carefully place it so that it does not spread around. Carefully put spring onions, chillies, and sprinkle with some dry mango powder. Eat your Egg Sambar Bombs in one bite to enjoy the layers of flavours.
