Crispy Fried Calamari

Ingredients To Marinate The Calamari

  • 15-20 Calamari Rings
  • 1 cup plain buttermilk
  • 3 stalks coriander
  • 3 green chillies
  • ½ inch ginger
  • 2 cloves garlic
  • Salt to taste

Ingredients To Coat The Calamari For Frying

  • 1 tbsp Maida (Refined Flour)
  • 1 tbsp Corn Flour
  • 1 tbsp grounded Cumin Coriander seeds spice mix
  • 1 tsp red chilli powder
  • 5 tbsp of Vegetable oil
  • 5-6 lime wedges

Step 1: To soak the Calamari rings, take a grinder and add 1 cup of plain buttermilk, 3 stalks of coriander, 2 garlic cloves, 3 green chillies, ½ inch ginger and add salt to taste. Grind the ingredients well with the buttermilk. Now pour the aromatic herby buttermilk to the bowl containing Calamari rings and allow it to soak for 20 minutes. This process will make the Calamari rings tender and flavourful.

Step 2: Take a small bowl, add 1 tbsp of Maida (refined flour), 1 tbsp of Corn Flour, 1 tbsp of freshly grounded spice mix of Cumin and Coriander seeds, and 1 tsp of red chilli powder. Mix it properly to coat the Calamari rings. Take a wok shaped pan, add 5 tbsp of vegetable oil, and allow it to heat up in medium-high flame.

Step 3: Slowly coat the Calamari rings with the flour spice mix and put it in the bubbling hot oil. Put 2-3 calamari rings at once to evenly spread in the oil. Always maintain the heat between medium-high to low flame. To avoid making the Calamari rings chewy, do not over fry.

Step 4: Fry the Calamari rings for 2 minutes maximum in the hot oil by continuously moving the rings. Remove the fried calamari rings once it is brown on both the sides, place it on a paper towel to soak the excess oil. Serve your Crispy Fried Calamari with some lemon wedges and your favourite spicy sauce.
