Chicken Steamed Momos with Spicy Red Paste

Ingredients for Momo

  • 250 gms of minced meat (chicken)
  • 1 tbsp of black pepper powder
  • 4 tbsp of curd/yogurt
  • 1 tbsp of white vinegar
  • 1 tbsp of tamarind paste (optional)
  • 1 medium red onion
  • 3 cloves of garlic & ½ block of ginger
  • 1 tbsp of vegetable oil
  • 2 tbsp of fresh coriander finely chopped
  • 4 cups refine wheat flour or maida
  • Salt to taste
  • Handful of spring onion for garnishing

Ingredients for Spicy Red Paste

  • 7-8 dry red chillies
  • 1 tbsp of apple cider vinegar
  • 1 tbsp of cumin (jeera) seeds
  • 2 pods of garlic
  • 2 green chillies
  • Salt to taste
  • Water as required

Step 1: Clean the minced meat and marinate with yogurt, black pepper powder, soy sauce, vinegar, tamarind paste, curd, grated onion, ginger, and garlic. Mix it properly and add some salt to taste. Keep it aside for 40 minutes.

Step 2: Take a big bowl and pour 4 cups of refined wheat flour. Add 1 tbsp of vegetable oil, 2 tbsp of fresh coriander and mix it. Add water in small quantity to knead the dough slowly, until it is smooth. Keep it aside by covering the bowl for 15 minutes. Take 1 bowl of lukewarm water and soak the red chillies.

Step 3: Cut the dough into small balls and roll up each ball into 3 to 4-inch diameter. Now, take a medium size spoon and scoop out the marinated minced meat. Place the filling into the each rolled up dough ball. Now use your thumb and forefinger to pinch the edge of the dough and start folding it slowly to circle it into one spot. Pinch it again to close the filling, it helps to preserve the meat juice inside.

Step 4: Now take a steamer, fill the bottom deck with water and start brushing the upper decks with some vegetable oil. I used a double decker steamer, you can use one or three, depending on the quantity. Start placing the momos one by one slowly, make sure there is space between each piece. Close the steamer and allow it to steam for 15 minutes.

Step 5: Now take out the red chillies, put it in a blender. Add 1 tbsp of apple cider vinegar, 2 cloves of garlic, 1 tbsp of cumin (jeera) seeds, 2 green chillies, salt to taste. Grind it into a smooth paste. Add water if required.

You are ready to serve your piping hot steamed momos with spicy red paste. Add some spring onion to garnish before serving.
