Chicken In Sambar Masala

Ingredients To Marinate The Chicken

  • 4 parboiled chicken drumsticks
  • 2 tbsp sambar powder
  • 2 tbsp coconut milk

Ingredients To Make The Masala

  • 1 medium-size onion
  • 1 medium-size tomato
  • 2 garlic cloves
  • 2 green chillies
  • 1 tsp tamarind paste
  • 1 tsp turmeric
  • 1 tsp red chilli powder
  • 1 tsp black pepper powder
  • 6-7 curry leaves
  • 2 cups chicken broth
  • 1 tsp mustard seeds
  • 2 tbsp vegetable oil
  • 1 tbsp mustard oil
  • salt to taste

 Steps To Marinate The Chicken

In a bowl, put 4 parboiled chicken drumsticks and add 2 tbsp of sambar powder with 2 tbsp of coconut milk. Mix the ingredients well with the chicken drumsticks and let it rest for 30 minutes.

Steps To Prepare The Masala

Finely diced 1 medium-size onion, 1 tomato, 2 green chillies, and 2 garlic cloves crushed.

Heat a bottom-heavy pan, add 2 tbsp of vegetable oil, heat it and add the onion, chillies, and garlic. Stir until translucent.

Add the diced tomatoes and mix it well with the onion, garlic, chillies. Allow it to simmer for 5 minutes in medium-low flame.

Now add 1 tsp turmeric with 1 tsp of red chilli powder and stir well with the spice mixture. Pour ½ cup of chicken broth and allow it to boil for 5 minutes in medium-low flame.

Add the marinated chicken drumsticks to the pan and stir well with the spice mixture. Close the lid of the pan and let it simmer for 10 minutes in medium-low flame.

After 10 minutes, add 1tsp black pepper powder with 1 tsp tamarind paste. Mix well, add 1 ½ cup of chicken broth, add salt to taste and close the lid to cook for 15 minutes in medium-low flame.

Stir the masala once and check if the gravy is thick enough. Add 3-4 curry leaves and allow it to simmer for another 5 minutes to finish the dish.

Before serving the dish, temper 1 tbsp of mustard oil with 1 tsp of mustard seeds and 4 curry leaves.

Pour it over the Chicken in Sambar Masala and enjoy it with your loved ones.
