Burnt Onion Garlic Mushroom Stir Fry with Bok Choy and Sautéed Cherry Tomatoes

Step 1

Clean 100 gms button mushroom, cut in half, and soak in salted water for 15 minutes.

Take 100 gms of bok choy, clean, and boil for 10 minutes in salted water. Drain the water and keep it aside.

Take 1/2 cup cherry tomatoes, cut in half, and toss it in a pan with olive oil. Saute for 4-5 minutes in high heat and keep it aside.

Step 2

Finely dice 2 medium-size onions and 7 garlic cloves.

Heat a wok with 3 tbsp mustard oil and fry the onions with garlic on a high flame. Deep fry it to get the burnt flavor.

Add the mushrooms and give it a good stir.

Add 2 tbsp black pepper powder, 1/2 tsp garam masala, 1 tbsp soy sauce, and stir in high flame.

Keep stirring for 6-7 minutes on a high flame and add salt as per your requirement to finish the dish.

Step 3

For plating, put the boiled bok choy at the bottom, pour the stir-fried mushrooms and garnish it with sauteed cherry tomatoes.

The dish goes well with noodles or fried rice.
